I read about 8 of your pieces before this one, and I can’t believe you’ve only cooked professionally for 5 years. There’s a depth to your writing that I trust translates to your food too.

And if you want in on something of a secret (not mentioned it on the newsletter yet) I'm actually returning to restaurant cooking life in a few weeks. I've missed it too much.
