As someone who has spent equal amounts of time in Nordic countries as I have North Korea, I’d never given a thought to the lack of almost everything in the winter months and how that has shaped the cuisine. I’ll never look at Nordic smoked salmon with dil herbs the same way again in U.K. supermarkets!
