A recipe for Finnish "Laatikko"
A great Finnish side dish made from pureed root vegetables
This is a hearty but surprisingly light side dish of pureed and baked root vegetables that is commonly eaten at Christmas in Finland. It has a perfect balance of spice and sweetness that is one of my favourite elements of Nordic cuisine.

350g floury potatoes
350g parsnip
150ml cream
1 tbsp honey
30g butter
