This is a hearty but surprisingly light side dish of pureed and baked root vegetables that is commonly eaten at Christmas in Finland. It has a perfect balance of spice and sweetness that is one of my favourite elements of Nordic cuisine.

Ingredients (4-5 people as a side)
350g floury potatoes
350g parsnip
150ml cream
1 tbsp honey
30g butter
1/4 tsp nutmeg
1/4 tsp grated ginger
salt and pepper
1 egg
1 tablespoon panko breadcrumbs
Extra butter to top before baking
Method
Set oven to 180°c/355°f
Boil vegetables until very tender
Mash these or (as I do) use an electric whisk to puree them
Add the cream, honey, nutmeg, ginger, butter
Season to your taste with salt and pepper then beat in the egg
Put into a baking dish and sprinkle the breadcumbs on top and dot with some extra butter
Bake for around an hour until hot through and golden brown on top
